In our kitchen, Nordic flavors meet the philosophy of Mediterranean cuisine, creating extraordinary taste experiences. Head Chef Silver Illak crafts dishes that tell the story of local nature, Mediterranean herbs, and long-standing traditions.
The Nordic mindset of using local ingredients lies at the heart of our dishes, honoring local heritage and nature. For example, our organic lamb comes from Ala-Mähkli Farm in Karula National Park, where special attention is given to animal welfare and the quality of the meat. We are one of the few restaurants in Estonia that values the entire lamb, preparing all cuts on-site and following a zero-waste philosophy.
